  1. Comienza a formar tu mise en place.
  2. Primero se hará el prefermento (poolish) mezclando la harina con la levadura y poco a poco el agua tibia, hasta obtener una mezcla homogénea y dejamos leudar hasta que duplique su tamaño y el superficie obtenga burbujas.

  7. Después del proceso de fermentación, ponchamos para liberar el exceso de CO2.
  8. Pasamos la masa a la mesa y comenzamos a extender con la ayuda de un rodillo.
  9. Recortamos los bordes para formar un rectángulo.
  10. Barnizamos con mantequilla derretida, agregamos azúcar blanca mezclada con canela, luego agregamos las pasas remojados en el controy,(puede agregar otro relleno como nuez picada, arándanos).
  11. Envolvemos formando un taco, empezando desde el lado más largo.
  12. Luego hacemos los cortes con 2 dedos o 2 cm de separación.
  13. Engrasamos y enharinamos una bandeja con paredes. Acomodamos dejando una distancia, encima de los roles colocamos cubitos de mantequilla, con un poquito de azúcar y dejamos reposar hasta que dupliquen su volumen.
  14. Metemos a hornear a 180° por 30 minutos.
  15. Para el glaseado mezclamos el controy que ocupamos para reposar las pasas con el azúcar glas y para darle un mejor toque, un poquito de leche. Agregamos a los roles y a disfrutar.
