- Para la masa final poner en una bandeja de pan la harina, azúcar, sal, huevo y levadura además del poolish. Amasar durante 10 minutos.



- Agregar la mantequilla derretida junto con la ralladura de naranja y amasar durante 15 min hasta tener una masa suave.


- Reposar en la bandeja hasta que duplique su tamaño.

- Después de la fermentación ponchar la masa y extender sobre una mesa enharinada. Dar forma de rectángulo. Barnizar con huevo batido con ayuda de una brocha. Poner el azúcar mascabado y el azúcar blanca mezclada con la canela en polvo. Agregar las pasas y arándanos remojados en controy y las nueces picadas. Envolver haciendo un gran taco y pegando cada vuelta con huevo batido.



- Cortar en rebanadas de 2.5 cm de ancho y acomodar de manera individual o bien si se prefiere de 5 cm de ancho para acomodar en un molde de aluminio rectangular. Poner la mantequilla en cubitos encima del rol y reposar 20 min antes de hornear por 30 min a 200°C.
