- 1-2 piezas pollo
- 1 zanahoria
- 1 rama apio
- 2 ramas perejil
- 1 taza harina
- 1/2 cucharadita Royal
- 1/4 cucharadita sal
- 1 cucharada azúcar
- 1 huevo
- 2 cucharadas mantequilla derretida
- c/n leche
- 1 cuadritos de mantequilla
- c/n cebollitas de cambray
- 2-3 ramas perejil más
- al gusto sal o consomé en polvo
- al gusto salsa inglesa
- al gusto Jugo Maggi
Instructions to make to make Consomé Celestina
- A pesar de ser un platillo ligero, se debe hacer en varias etapas.
La primera es preparar un consomé ya sea de pollo o de carne cociendo esta con una zanahoria, una rama de apio y unas ramas de perejil. - Para hacer las CREPAS* necesitamos:
1 taza de harina
1/2 cucharadita de Royal
1/4 cucharadita de sal
1 cucharada de azúcar
1 huevo
2 cucharadas de mantequilla derretida y la leche necesaria para que quede un atolito ligero
Se bate la clara a punto de turrón y luego se le agrega la yema
Por separado cernimos la harina dos veces con el polvo de hornear Royal, la sal y el azúcar y - Se le va agregando la leche previamente revuelta con la mantequilla derretida a que quede un atole más bien ligero. Se pone una sartén al fuego se le pone aceite (o bien aceite en spray) y se escurre casi totalmente y con una cuchara de cocina se vacía el atolito y se van haciendo las crepas y las reservamos.

- Una vez cocido el consomé lo colamos y lo metemos un rato al refrigerador para clarificarlo y quitarle toda la grasa.
En una cacerola ponemos dos cuadritos de mantequilla y picamos 3 cebollitas de cambray con todo y rabitos y unas 3 ramas de perejil picadas y ponemos a que todo se refría. Agregamos el consomé, rectificamos la sal y sazonamos con un poco de salsa inglesa y jugo Maggi. - Tomamos cada crepa y la enrollamos y cortamos en tiritas delgaditas, las colocamos al fondo del plato y cubrimos con el consomé.
Quizá el aspecto no sea muy maravilloso pero el sabor lo justifica.
