- Nos damos cuenta que el poolish está listo, cuando comienza a tener burbujas en la superficie.

- Dejamos fermentar, yo lo he dejado todo un día en refrigeración, pero también lo podemos dejar cerca del calor durante una hora y media y estará listo. ¡LISTO! Mi poolish, comenzare con la masa.


- Debemos tener pesada nuestra harina, la sal, la levadura y el aceite

- Revolvemos los secos y procedemos a realizar nuestro volcán sobre la mesa

- Vamos añadiendo el poolish poco a poco y vamos amasando



- Agregamos un poco de aceite y seguimos amasando hasta incorporar completamente, buscamos siempre la homogeneidad en la mezcla. Esperamos 20 a 25 minutos, para que doble su tamaño el tiempo va variar dependiendo de las condiciones del clima.



- Una vez que haya doblado su tamaño, pochamos para comenzar a estirar nuestra masa.


- Procedemos ahora a estirar sobre la mesa, con ayuda de un rodillo o con las manos (yo lo he hecho con un vaso largo)



- Ahora vamos a sacar unos rectángulos, yo corte lo excesos con ayuda de un cuchillo, para darle una mejor forma.


- Le vamos a colocar ahora los trozos de cebolla por la superficie, tratando de apretarlos un poco para que entren en la mezcla. Los dejamos unos minutos hasta que doblen su tamaño.


- Una vez que hayan doblado su tamaño, procedemos a hornear a 180 grados centígrados por 15 minutos. Y listo!.
