- Separar yemas y claras.En la batidora montar las claras a punto de listón agregando la mitad del azúcar una vez que las claras tengan consistencia. Batir unos minutos hasta que se formen picos firmes.



- A la mezcla de chocolate y mantequilla agregar las yemas una por una, después alternar el merengue con los polvos y revolver para que quede todo homogéneo.


- En dos moldes previamente engrasados, añadir la mezcla para hornear por 25 minutos a 180 •c.


- Para el jarabe, calentamos agua en una olla; agregar la raja de canela y el azúcar. Dejar hervir hasta que el almíbar se espese y posteriormente reservar para que se enfríe.
- Para la ganache, en un coludo calentar la crema para batir y añadir el chocolate troceado. Remover para que se incorporen y reservar una vez que estén en punto de ebullición.

- Montar la crema de chocolate y añadir unas gotas de colorante negro para obtener el color deseado. Por otro lado, batir la ganache y reservar.


- Cuando el bizcocho salga del horno y esté frío, pasar a una base giratoria. Con un cuchillo de sierra retirar la parte de arriba para que quede más estable la base. Hacer un corte por en medio en ambos bizcochos.


- Con el jarabe de azúcar hidratamos los bizcochos. Llenar una manga pastelera con crema de chocolate. En la orilla hacemos una línea para llenar el contorno y luego con la ganache cubrimos lo demás. Repetir los pasos hasta formar las cuatro capas del pastel.


- Posteriormente con los bizcochos hidratados y rellenados, pasar una capa de crema pastelera en toda la superficie. Luego aplanar con una espátula acodada o una raspa. Cuidar de no romper el bizcocho.


- Dejar enfriar en el refrigerador por 20 minutos.
- Por último, decorar con los chocolates de su elección y listo.
