  2. Licuamos las galletas y en un bowl las mezclamos con el azúcar, las almendras molidas, canela en polvo (opcional) y la mantequilla derretida hasta formar una masita
  3. Colocamos la masa en el molde de hornear y extendemos por las orillas con un grosor de 3 cm, tapamos con fill y refrigeramos
  4. En un bowl con ayuda de una pala o batidor globo, suavizamos el queso crema hasta que esté pomada, agregamos el azúcar y lo integramos
  5. Agregamos los huevos uno por uno, vainilla, jugo de limón, la harina suave y mezclamos muy bien
  6. Por último agregamos la crema ácida y mezclamos muy bien hasta obtener una mezcla homogénea y vertemos sobre los moldes con galleta
  7. Horneamos a 170°c durante 1 hora y media a baño María
  8. En lo que el cheesecake se hornea, haremos la compota de fresa
  9. En una sartén o en una olla ponemos la fresa picada y dejamos que se consuma unos minutos, agregamos el azúcar y revolvemos, agregamos un poquito de agua (opcional)
  10. Ya que esté hirviendo agregamos la fécula de maíz hidratada con el jugo de limón y revolvemos muy bien
  11. Dejamos cocinar unos minutos hasta que comience a espesar y retiramos del fuego
  12. Sacamos del horno el cheesecake una vez que la mezcla ya no se mueva y al momento de insertar un palillo este salga limpio
  13. Dejamos enfriar y procederemos a colocar la compota de fresas encima
  14. Listo, a disfrutar de este delicioso cheesecake
