- Para el bizcocho separar las yemas de las claras y el chocolate llevarlo a derretir a baño maría.


- Para el merengue francés, batir las claras con el azúcar (50 gr).



- Acremar la mantequilla luego agrega los 150 gr de azúcar, hasta que tenga una consistencia esponjosa.

- Agregar los yemas de huevo uno por uno, después integrar el chocolate en forma de hilo.


- Integrar el merengue con los secos.


- Después de integrar todo la mezcla tienen que estar espesa.
- Integrar la mezcla al molde y hornear a 180°C por 40 min.

- Desmoldar y dejar enfriar por unos minutos.
- Para el almíbar
Lleva todos los ingredientes a ebullición y luego retira.

- Para el ganache, llevar a fuego bajo la crema a ebullición y luego integrar el chocolate, y batir con un batidor hasta tener una mezcla homogénea.



- Una vez que esté fría pasarlo a una manga.

- Para el relleno cortar el mango en trocitos pequeños, tener lista la crema y agregar el colorante y pasarlo a una manga.

- Tener cortado en tres partes el bizcocho, tener la primera partes en la base giratoria hidratarlo con el almíbar.

- Agrega el relleno y así con la siguente capa de bizcocho.


- Ahora solo cubre con el ganache y con ayuda de una espátula moldéalo, hasta tener una forma lisa


- Decorar a tu gusto y disfrutar de un delicioso pastel.
