- En un bowl batimos la mantequilla con el azúcar hasta que esté esponjoso y claro



- Separamos las claras de las yemas, las yemas las batimos con la mantequilla y las claras las hacemos un merengue francés



- Derretimos el chocolate en el microondas en intervalos de 15 segundos o a baño María y se lo agregamos en forma de hilo a la mezcla de yemas con mantequilla



- Cernimos los secos y a la mezcla de chocolate vamos intercalando entre merengue y harina con movimientos envolventes, hasta finalizar con una mezcla homogénea



- Engrasamos y enharinamos los moldes, vertemos la mezcla hasta la mitad o 3/4 de su capacidad



- Horneamos a 180°c durante 25 minutos o hasta que un palillo salga limpio al insertarlo, no abrir el horno y dejarlo enfriar cuando esté listo.

- En lo que los bizcochos se hornean, haremos un almíbar, en una cacerola colocamos agua, raja de canela, azúcar, vainilla y brandy, dejamos que de un primer hervor, retiramos del fuego, dejamos enfriar y estará listo


- Haremos la ganache, en un bowl colocamos el chocolate y la crema para batir, podemos hacer este procedimiento en baño María o en microondas, solo necesitamos calentarlo y derretir el chocolate con la crema y estará listo, movemos constantemente para que tome textura y dejamos enfriar



- Ya que los bizcochos estén fríos, los cortamos en 2 o 3 capas con ayuda de un cuchillo sierra


- Antes de comenzar a ensamblar, haremos la crema de chocolate, podemos comprar la crema para batir sabor chocolate y solo necesitamos batirla o comprar sabor neutro y agregar el chocolate derretido


- Comenzamos el ensamblado del pastel, mojamos los bizcochos, ponemos ganache, rellenamos con fruta y colocamos una capa de crema en las orillas, hacemos un crumb coat al pastel (capa fina de frosting antes de poner la última para que esta quede perfecta) y refrigeramos unos 15 minutos





- Terminamos de decorar el pastel y estará listo para disfrutarse
