- Realizar la mise en place.


- Separar claras y yemas.


- Para el bizcocho:
Montar las claras a punto de nieve con la mitad del azúcar.

- Batir las yemas a punto de listón con el azúcar restante, agregar la vainilla.


- Mezclar alternadamente con la harina cernida y con las claras a punto de nieve de forma envolvente.



- Agregar las pasas y nueces y verter en un molde engrasado.
Hornear a 180°C durante 30 minutos o hasta que salga limpio el palillo.
Dejar enfriar.


- Cortar los discos y reservar.


- Para el jarabe:
Poner en una olla el agua, azúcar y la esencia de vainilla.
Dejar hervir durante 5 minutos.


- Para la crema de chocolate:
Llevar a baño María el chocolate.
Reservar.

- Montar la crema para batir y verter en forma de hilo el chocolate a la crema.



- Para el betún:
En un bowl acremar la mantequilla, añadir la esencia de vainilla y mezclar.
Incorporar poco a poco el azúcar glass hasta que quede una mezcla homogénea, reservar.


- Con el jarabe hidratar los discos y agregar los rellenos hasta terminar con todos los discos.



- Para el frosting:
Acremar el queso crema integrando poco a poco al azúcar glass.


- Cuando el queso crema esté a punto de pomada agregar la crema para batir poco a poco.
Incorporar la esencia de vainilla. Reservar.

- Cubrir el pastel con el frosting.

- Para el forrado de fondant se necesita amasar previamente.
Colocar un poco de azúcar glass en la mesa de trabajo y con la ayuda del rodillo comenzar a estira del centro hacia los lados hasta que quede una capa delgada.


- Con el rodillo enrollar el fondant y cubrir por completo el pastel, cortar los extremos y comenzar a pegar cuidadosamente hacia los lados.


- Hacer figuras de fondant (en este caso yo realicé flores de diferentes tamaños).


- Por último pegar las figuras de fondant con cuidado.
