- Bizcocho:
en un bowl añadimos los huevos y los blanqueamos hasta que tenga un color amarillo pálido, añadimos la mantequilla derretida de poco a poco hasta integrar



- Cernir la harina, el azúcar y con el polvo para hornear y mezclar el yogurt con el jugo de naranja


- Agregar a las huevos los polvos y la mezcla de yogurt y naranja alternando hasta acabar


- Vaciar en un molde con papel encerado y hornear 200°C por 35 min o hasta que al introducir un palillo este salga limpio


- Crema pastelera:
licuar los duraznos sin la cáscara, blanquearemos los huevos junto con el azúcar hasta que tenga color amarillo pálido

- Calentamos la leche y agregamos el jugo de durazno, vamos a atemperar las claras agregando poco a poco la leche para que adquiera la temperatura de la leche



- Por último agregaremos la maicena y recorremos hasta que adquiera un espesor, lo retiraremos del fuego y lo dejaremos enfriar



- Cortarenos el pastel en dos discos y pondremos la crema pastelera


- Mousse de mango:
Licuaremos la pulpa del mango, hidrataremos la grenetina en agua tibia

- Montarenos la crema para batir utilizando un bol con hielo y encima otro bowl para la crema abriremos a velocidad rápida hasta que este en punto listón


- Blanqueamos las yemas hasta que tengan color amarillo pálido

- Calentamos el agua junto con el azúcar hasta que llegue a una temperatura de 200°C


- Derretiremos la grenetina hidratada unos 20 min en el microondas, agregaremos el azúcar en forma de hilo a las yemas una vez incorporado agregaremos la grenetina y revolvemos, agregaremos la crema batida alternando con el jugo de mango hasta terminar





- Pondremos un aro encima del pastel y pondremos un poco de crema pastelera a las orillas del aro para que no se salga y agregaremos poco a poco la mezcla, lo refrigeramos

- Compota de maracuyá:
agregaremos agua a la maicena y reservaremos, en un sartén agregaremos la pulpa de maracuyá y azúcar hasta que se disuelva el azúcar, una vez lista agregaremos la maicena y recorremos hasta que espese, lo retiraremos del fuego



- Ganache de chocolate:
Picamos el chocolate en trozos pequeños, calentamos la crema batida sin llegar a hervir, agregaremos al chocolate y lo mezclaremos hasta que se incorpore


- Por último sacaremos el pastel y desmoldaremos el mousse y sobre el agregaremos la compota y sobre el pastel agregaremos el ganache, decora a tu gusto
